Improving the dietary behavior of populations is a priority for public authorities; indeed, associated diseases are the first cause of mortality in the world. To this end, our research shows the interest of taking into account two factors: on the one hand, the perception of nutritional risk, and on the other hand, the fact of sharing meals (commensality) in the family.

This article proposes a development of the Service Dominant Logic (SDL) in the case of service relationships with vulnerable populations on the basis of a qualitative study conducted in a geriatric service. This study reveals, on the one hand, care practices governed by representations of the "deficient" elderly patient, and on the other hand, care practices irrigated by representations of the "capable" elderly patient.
